Moulles de Nicole 1 1/2-2 sticks of butter 1/2 bottle white wine(any white wine would work but fragrent and fruity works best) Chardonnay/White Zinfandel 3 leeks or 2 onions sliced 1 cup minced garlic 5-10 lbs Mussels(adjust recipe as needed) 1 cup chopped parsley 1-2 lemons cut into eighths 3 roma tomatoes (optional-use a flavorful but solid cooking tomato) good spice combos rosemary, thyme, bay oldbay spice mix creole seasoning melt butter in a large stock pot. add leeks and garlic and saute. add spices, parsley and wine. let sit for ten minutes, add water till the pot is half full, heat to boiling. add mussels and boils till they pop open and are hot. Serve in large bowl with broth, or spread on table covered with newspapers. Dishes of broth on the side(like soup). LOTS AND LOTS of crusty bread and fresh frites.
